Crawfish Etoufee (A-Too-Fay)




Old time crawfish etoufee was made using the crawfish fat as a flavoring agent. In the early 1970's the FDA prohibited the crawfish processors from selling crawfish fat. I bought a sack of live crawfish and Robin and Jason came over to help peel. We saved the fat and Morele cooked an old time etoufee. Man, dat was good, yah.

  1. How exactly do you remove the fat from a crawfish? They don't seem like they would have that much fat on them.
